We have a ton of rhubarb. I definitely don't remember having this much around this time last year, so I'm trying to come up with new ways to use it. I recently went to our local Lavendar Farm (my fav place in the world!!) with a friend to catch up! I ordered an unbelievably delicious lavender italian soda and seriously, it was out of this world. They also make life changing lavender scones with lavender jelly. I wasn't kidding, this place is one of my all time favourite places to go. Anyways, I thought I could tackle trying to make my own italian soda and use up some of that rhubarb we have. They turned out pretty good, and they tasted really really yummy. Although, the half and half milk reacted kind of weird to the sparkling water. Which I guess was to be expected, but none the less, it was still really delicious and surprisingly refreshing! :)
I N G R E D I E N T S
• 1 cup water
• 1 cup Sugar
• 3 stalks of rhubarb
• Sparkling water
• Half & half milk
D I R E C T I O N S
1. Make the syrup by putting the water, sugar and cut up rhubarb in a pot over medium heat. Heat until the sugar dissolves and the rhubarb falls apart. Then strain to get just the liquid.
2. Put equal part of syrup and half and half milk into a glass.
3. Then add the desired amount of sparkling water to top it up. Add mint for garnish (optional)
